Legris oysters are cultivated in parks located in the middle of the Lilia Islands archipelago, at the exit of Aber Wrac'h. They are characterized by a balanced, iodized flesh with notes of chestnut.

TAILLEPIED

Normandy Specials

The so-called “special” oyster is fleshy with more than 10.5% flesh on 100% of the animal. Recognizable by its drop shape and its specific concave shell. The TAILLEPIED family produces this quality oyster in the Bay of Veys in Normandy.

Marennes Oleron

Located in the heart of the Marennes-Oléron basin, Tafforet has been a producer, breeder and shipper of hollow oysters for 70 years. The Fine de Claire is a not very fleshy oyster with a very balanced flavor.

Clear Oysters

Marennes-Oléron oysters benefit from a special breeding and refining technique: they are refined and raised in claires; these are clay basins that fill when the tide rises and they retain water when the sea recedes. The oysters are placed "in claire" after 2 years in the parks, which gives them a particular flavor, specific to this terroir.
